Prepare the Chicken
Place chicken breasts between two sheets of plastic wrap and pound to an even thickness (about ½ inch).
In a shallow bowl, mix flour, garlic powder, salt, and pepper. Dredge each chicken breast in the flour mixture, shaking off any excess.
Sear the Chicken
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Cook the chicken for 3–4 minutes per side, or until golden brown and cooked through. Remove the chicken and set aside on a plate.
Make the Sauce
Lower the heat to medium. Add chicken broth (or wine) and lemon juice to the skillet, scraping up any browned bits from the bottom.
Stir in capers and let the sauce simmer for 2–3 minutes.
Combine
Return the chicken to the skillet and spoon the sauce over it. Let it cook for another 2 minutes to absorb the flavors.
Stir in the remaining tablespoon of butter to give the sauce a silky texture.
