Ingredients
  

  • 4 boneless skinless chicken breasts
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • ½ cup chicken broth or white wine, optional
  • cup fresh lemon juice about 2 lemons
  • ¼ cup capers rinsed and drained
  • 2 tablespoons fresh parsley chopped (for garnish)
  • Lemon slices optional, for garnish

Instructions
 

  • Prepare the Chicken
  • Place chicken breasts between two sheets of plastic wrap and pound to an even thickness (about ½ inch).
  • In a shallow bowl, mix flour, garlic powder, salt, and pepper. Dredge each chicken breast in the flour mixture, shaking off any excess.
  • Sear the Chicken
  • Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  • Cook the chicken for 3–4 minutes per side, or until golden brown and cooked through. Remove the chicken and set aside on a plate.
  • Make the Sauce
  • Lower the heat to medium. Add chicken broth (or wine) and lemon juice to the skillet, scraping up any browned bits from the bottom.
  • Stir in capers and let the sauce simmer for 2–3 minutes.
  • Combine
  • Return the chicken to the skillet and spoon the sauce over it. Let it cook for another 2 minutes to absorb the flavors.
  • Stir in the remaining tablespoon of butter to give the sauce a silky texture.
